Red mullet are found in a number in Vietnamese water. Red mullet is summer visitors to Vietnames waters, but with the warming seas, Red mullet’re starting to be seen all year round. Red mullet are bottom feeders, rummaging around in the sand for morsels to eat. Red Mullet are occasionally caught in bottom nets, set for sole, our guys in the channel catch them very occasionally.
Red Mullet has moderate flavor with moist, firm white meat, few bones and a fine flake. To get the best flavour from red mullet, it is important to buy the freshest available – the flesh should be firm. The eyes should be clear and bright and the gills bright red. The smell of Red mullet shouldn't be strong or fishy. When choosing fillets of red mullet, look at the flesh to check that there is no discolouration or damage
Rich in protein, like all fish, Red mullet contains some lipids, which are rich in unsaturated fatty acids and Omega-3.
Scaled and gutted, red mullet is perhaps best grilled but it can also be shallow-fried or baked. If grilling, slash the body on both sides diagonally down to the bone to help it cook more quickly and evenly. It partners particularly well with rosemary, so a sprig or two in the pan always works well. Other flavours it can happily pair with include chervil, tarragon and citrus.
