Croaker fish are native to the Western Pacific. Croakers are generally found in temperate waters. Croakers are caught with gillnets, pound nets and fish traps. Catching croakers is good throughout the year. Croakers are an abundant commercial fish species of China, Japan and Korea. Croakers are generally marketed fresh, frozen, but also sold salted or dried.

Raw croakers meat is usually snow white but may have a reddish tint. The cooked meat is white. Croaker is lean and full flavored, with an almost sweet taste. The flesh is firm, similar to that of black drum. The skin is edible.
The croaker fish are mainly used for food. This is a very good eating fish. Like most fish, croakers make for good eats when fried, it’s often breaded or dusted with cornmeal or flour and pan-fried, but baking croakers helps to bring out its natural flavor. Simply sprinkle the fillets with salt, pepper, lemon juice and bake 10 minutes for every inch of fish. When croakers start to flake easily, you’re ready to dig in. Croakers can also be marinated and sautéed, roasted and broiled. For a Southern favorite, dip a dressed, scaled croaker in water, milk, egg or a combination of the three, then roll in corn flour and cook in hot grease. The meaty fish also can be steamed whole.
